These Vegan Blueberry Muffins will solve all of your morning problems! They are filled with protein and fiber to keep you full throughout the day and are a little morning sweet treat!

Ingredients

Serving Size: 12 muffins
  • 2 cups rolled oats, ground
  • 1 scoop water lentil powder
  • 12 dates, pitted
  • 3/4 cup plant-based milk
  • 1 cup water
  • 1.5 tbsp ground flax seeds
  • 3/4 cup applesauce
  • 1 cup blueberries
  • 1 tbsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 tbsp brown sugar or maple syrup

Recipe

Preheat oven to 400 degrees F. Grease muffin tray or lay paper muffin cups in tray.

Put flax seed and wet ingredients into a blender and blend. Mix dry ingredients in a separate bowl. Once mixed, add wet ingredients into the dry mix and fold evenly. Fold in the blueberries.

Fill batter to the top of muffin cups.

Bake for 20 to 25 minutes. Enjoy!

Note: If you feel mix is too dry, add 1 tbsp water to the batter.
